
I met Elizabeth Poett in Waco, TX after we both started filming our shows for The Magnolia Network. Elizabeth is the rare combination of movie star glamour and a down-to-earth rancher. Those things seem an impossible mix and yet, Elizabeth pulls it off with rugged elegance. She has a passion for her traditions, her land, and her family, which makes her so relatable.

Her new cookbook tells the story of her picture book ranch, filled with cattle, honey bees, lavender fields, and views one could never get tired of. Most importantly it is where her family has lived for seven generations.

How am I supposed to pick just one favorite?!?! That’s nearly impossible! I’d say my top favorite pie would have to be either a cherry or a peach pie with a crisp/crumble topping. My favorite peanut butter dessert is definitely a classic chewy peanut butter cookie. So yummy!!
My favorite dessert of all time is a good old custard pie that my Mom got out of an old cookbook from the 1950’s when I was a little girl. The cookbook no longer has a cover and I keep it in a plastic bag to protect it when I’m not using it. The pie is pure creamy indulgence.It leaves that creamy sweet film in your mouth when you eat it like creme brulee’ does. There is nothing better in the world.

My mom makes a creamy peach pie from her best friend’s recipe…I love it! I use Alice Medrich’s peanut butter cookie recipe and put dark chocolate kisses on top for peanut blossom cookies…

I honestly cannot think of any pie I don’t like; however, I do love lemon meringue! The tartness of the lemon filling contrasted with the sweet, puffy meringue is a sure winner in pie world!

My family is big on pies; birthday desserts are almost always some type of pie. My father’s favorite pie is “fruit with a crust around it”, especially if it has a crumb topping.
