I met Elizabeth Poett in Waco, TX after we both started filming our shows for The Magnolia Network. Elizabeth is the rare combination of movie star glamour and a down-to-earth rancher. Those things seem an impossible mix and yet, Elizabeth pulls it off with rugged elegance. She has a passion for her traditions, her land, and her family, which makes her so relatable.

Her new cookbook tells the story of her picture book ranch, filled with cattle, honey bees, lavender fields, and views one could never get tired of. Most importantly it is where her family has lived for seven generations.
I am decidedly a city dweller but I am so captivated and curious about her bucolic world. If you’ve seen her show, Ranch to Table, you’ve probably felt the same pull to ranch life. My favorite pie hands down is Dutch Apple Pie; however I do love a good Peanut Butter Chocolate Chip Muffin every now & then!
I find myself longing for my Grandmother’s plain and simple custard pie. There is no written recipe from her and my attempts have not measured up to the creaminess of her custard and flaky crust. Old family recipes are treasures that leave lasting memories.

I would say that there is more than one type of pie to love each season. But to narrow it down, I love to make and share blueberry pie.

How does one pick a favorite pie? I love fruit pies and I love looking forward to the one that celebrates the current season or harvest. From strawberry rhubarb to blueberry to apple to pumpkin, they are all delicious, especially at the peak of their season. It’s like eating your way thru the weeks and months of spring, summer and fall!
My daughter (Kenyon ‘25) and my fav is lemon meringue pie!
Rather than going on about my fav pie (Tart Cherry) I will name my husband’s favorite, Mincemeat! My mother shared this same love. It was an immediate mother-in-love and son-in-love match made in heaven. I usually only make it twice a year, for Christmas and birthdays. I add sliced cinnamon apples on the bottom and then spread the mincemeat between top and bottom of homemade crusts. After it’s done, serve with Vanilla ice cream. Mmm good
Pie! Glorious pie! Definitely something to love and oh how hard to choose a favorite! One of my faves is a bit out of the ordinary – blueberry-gooseberry pie combined to make a delicious pie, if you grow gooseberries it is the best tasting. Try wild blueberries if you have a chance to walk in the woods. It will take a lot of berries but worth it. Brings back memories of searching for blueberries in northern Minnesota with my grandma who so enjoyed baking and cooking~
Lemon Meringue Pie is my favorite
That’s a tough one! If I could only have one it would be Aussie Key Lime Pie, it has the most delish chewy oatmeal cookie crust which is the perfect compliment to the tart lime filling.
