Preheat oven to 375℉.
Cut each squash in half vertically.
Seed, skin and cut up each type of squash in even pieces, about 1/2" thick and about an 1" x 3", as each squash's natural shape allows. Keep each squash type separate.
Combine 3 Tbsp olive oil, 1 tsp salt, 1/4 tsp pepper and 1 squash type in steel mixing bowl and toss to coat and flavor squash. Repeat for each squash type and keep separately.
Roast: 25-40 minutes, depending on your oven.
Place a sheet of parchment paper (for cleaning convenience) on a roast pan and place each type of squash on its own pan and pop it into the preheated oven.
Check on the cooking progress after 10 minutes. Then again in 5 or 10 minutes. When the bottom gets browned, turn the squash pieces.
Check again in 5-10 minutes to check browning on other side.
Pull out of oven when both sides are pleasantly browned and let it cool for about 5 minutes.
