Servings: 4 to 6 people
Equipment
- Large stainless mixing bowl
- Roast pan, 3 if you have it
Ingredients
- 1/2 Butternut Squash
- 1/2 Kabocha Squash
- 1/2 Acorn Squash
- 1 tsp Himalayan Salt per squash type
- 1/4 tsp Black pepper per squash type
- 3 Tbsp Extra Virgin Olive Oil per squash type
- Crushed pistachios to taste
- 1 Pomegranate seeded
- 4 Tbsp Mr. P's Speakeasy Bourbon Maple Syrup
Instructions
- Preheat oven to 375℉.
- Cut each squash in half vertically.
- Seed, skin and cut up each type of squash in even pieces, about 1/2" thick and about an 1" x 3", as each squash's natural shape allows. Keep each squash type separate.
- Combine 3 Tbsp olive oil, 1 tsp salt, 1/4 tsp pepper and 1 squash type in steel mixing bowl and toss to coat and flavor squash. Repeat for each squash type and keep separately.
- Roast: 25-40 minutes, depending on your oven.
- Place a sheet of parchment paper (for cleaning convenience) on a roast pan and place each type of squash on its own pan and pop it into the preheated oven.
- Check on the cooking progress after 10 minutes. Then again in 5 or 10 minutes. When the bottom gets browned, turn the squash pieces.
- Check again in 5-10 minutes to check browning on other side.
- Pull out of oven when both sides are pleasantly browned and let it cool for about 5 minutes.
Plating
- Place each squash type together in its own row on your platter. Sprinkle crushed pistachio on entire plate. Sprinkle seeded pomegranate on entire plate. Drizzle generously, Mr. P's Speakeasy Bourbon Maple Syrup on entire plate, and serve.
