When the weather is hot and sticky, you may want to give your oven a break but still want fresh muffins in the morning. These recipes take just ONE minute to bake in the microwave so you can grab and go on a busy morning.
I had so much fun, that I ended up with TWP flavors: chocolate-banana (which can double as dessert) and classic blueberry muffins!
In the heat of the summer, when you want a sweet treat or a quick breakfast that’s made from scratch but doesn’t take long at all, try these. Each recipe makes two mugs. You can enjoy one and save the other in the refrigerator for later. Just pop them in the microwave when you are in the mood for fresh muffins.

Mug Muffin Basics
What makes these muffins so simple (in addition to the quick microwave bake) is that you only need a few base in ingredients. The mix ins vary depending on flavor, so check out the full recipes below, but to start all you need is a mug, a bowl for mixing and:
- An egg
- Flour
- Baking Powder
- Brown Sugar
- A pinch of salt

Microwave Banana Mug Muffins Recipe

Ingredients
- 1/4 cup (60g) mashed ripe banana
- 1 Tbsp veg oil
- 1 yolk
- 2 Tbsp brown sugar
- 1/4 tsp cinnamon
- Pinch salt
- 1/4 tsp baking powder
- 1/2 cup (60g) all-purpose flour
- 2 Tbsp chocolate chips optional
Topping
- 2 tsp butter at room temperature
- 1 Tbsp brown sugar
- 1 Tbsp all-purpose flour
- Pinch salt
- 1/4 cup pecans
Instructions
- Lightly grease two 8oz mugs with butter.
- In a medium-sized bowl, whisk together the banana, oil, yolk, sugar, cinnamon, salt, and baking powder. Use a rubber spatula to fold the flour and chocolate chips into the banana mixture just until combined. Scoop the batter into the prepared mugs.
Topping
- In a small bowl, using your fingers or a spoon combine the butter, brown sugar, flour, salt, and pecans until clumpy. Scatter the topping over the muffin batter.
- Microwave the mugs one at a time for about 1 minute. Each microwave is different so the timing may take a few seconds more or less. Serve immediately with or without ice cream.

- You can fill the mugs with the batter and refrigerate them for up to 48 hours, until ready to microwave.
Microwave Blueberry Mug Muffins Recipe

Ingredients
- 2 Tbsp unsalted butter melted and slightly cooled
- 1/4 cup 50g brown sugar
- 1 egg
- 1/2 tsp lemon zest
- Pinch salt
- 1/4 tsp baking powder
- 1/2 cup 60g all-purpose flour
- 1/2 cup 60g fresh or frozen blueberries
Topping
- 1 tsp butter at room temperature
- 1 Tbsp brown sugar
- 1 Tbsp all-purpose flour
Instructions
- Lightly grease two 8oz mugs with butter.
- In a medium-sized bowl, whisk together the melted butter, sugar, egg, zest, salt, and baking powder. Use a rubber spatula to fold the flour into the butter sugar mixture just until combined. Gently and quickly fold in the berries, with just a couple stirs. Scoop the batter into the prepared mugs.
Topping
- In a small bowl, using your fingers or a spoon combine the butter, brown sugar, and flour until clumpy. Scatter the topping over the muffin batter.
- Microwave the mugs one at a time for about 1 minute (they may need an extra 10 seconds if the berries are frozen). Each microwave is different. Serve immediately.
