					<description><![CDATA[Made this for Christmas!!  It was a showstopper!!   Not a baker so it was all encompassing for a few days.  Few things that surprised me was that ordinary  tape doesn&#039;t work on parchment paper.  I learned there is a parchment paper tape so reverted to a needle and thread to latch it onto the cardboard.  I made 2 batches of puffs and 2 batches of filling since I sat the puffs around my base and used 15 so knew I would need quite a few for my height.  The caramel was a bit challenging for me ... keeping the right temp for dipping and then a cooler temp for making threads.  I made 2 batches of caramel too and a vanilla cream.  The cookies were amazing - my 1st time making olive oil cookies.  I watched Zoe&#039;s program making it 5 times to follow all of the techniques.  In all it was a big hit for Christmas dinner and the showstopper is promised to be.  I expect next time I make it to be easier.]]></description>
