					<description><![CDATA[My first attempt at the Buche and I enjoyed it. Inspired by my husband’s love for a good vanilla cake and need to make something nice for Christmas, I made the log and it came out great. The video was super helpful. I follow directions for the sponge, for the ganache I made a white chocolate, strawberry and vanilla bean. I used some pulverized strawberry and it gave a nice flavor. I decided on cream cheese buttercream and looking back I probably wouldn’t use that again. As I used a lot of vanilla, I wanted each section to have some other special flavor. The frosting tastes great, it’s just a tiny bit grainy whereas a regular buttercream is not. I did find things a bit confusing meaning the video didn’t always match the directions. In one area you’re instructed to brush a simple syrup on it but I didn’t see in the recipe.  Not a huge deal.That’s my only critique so to speak. Thank you for a great recipe. It tastes great and can’t wait to put on Christmas table. I crushed Oreos for the forest floor, made marzipan mushrooms instead of meringue, sugared some cranberries, dried sage and fennel blossoms I had from my garden, then dusted all in confectioners sugar like snow, hope it all holds in fridge!  If you’re unsure about trying this, just do it. It’s not hard just takes a few steps.]]></description>

Hi Sarah,

I do it on parchment so I have plenty of room to sift and can pick it up easily. You can do the same in a bowl, but I find the parchment easier to deal with.

I have used oil, butter and pam to grease the pan with good results. A sheet that was greased with butter and filled with cake batter will probably not smoke at 350 degrees. It may be something that had landed on the bottom of your oven and heated up along with your cake.
