I used russet potatoes and bread crumbs as I cannot find matzo meal in the stores near me. I used an ice cream scoop to form the latkes and flattened with a fork in the oil, which worked great. I got 18 large size latkes from the batch - they came out thick, beautiful crisp crust and soft, almost fluffy in the interior. One note - these do take longer to cook than other latkes, but they reheated beautifully in a 350 degree oven (about 10 minutes, uncovered on a cookie sheet).]]></description>
