The recipe calls for a 9x4 inch Pullman pan, which is deeper than a regular loaf pan, or a 10x5 inch loaf pan, so your pan is just a bit too small. 					<description><![CDATA[I baked this from my copy of Zoe Bakes Cakes. Even using a bigger pan (9x5, not 9x4), I had way more batter than would bake successfully in the pan. I decided to just trust Zoe, as her recipes have never failed me (the cookbook is amazing!), but the cake grew significantly in height and spilled over into the oven, burning and filling the house with smoke. I was able to mostly rescue the rest, but I’m wondering what happened. Did I incorporate too much air? Or does the recipe just give you way too much batter? The only change I made was doubling the zest and omitting the lemon extract because I didn’t have any.]]></description>
