Hi Sofia, The peaches and ice cream can be prepared the day ahead and assembled to serve. Just don’t freeze the peach!

Hello! You will make the peach puree and use 1/2 cup for swirling into the ice cream. Three tablespoons goes into the filling for the peaches. The rest can be drizzled on top at the end, if desired. I will be sure to update the recipe so it’s more clear. Thank you!
