My garden is exploding with rhubarb this Spring and the stalks are about 1-1/2 in diameter - yes - huge. Many of the leaves were blocking the path in the garden so I had to clear it and picked a ton of rhubarb. I am always on the hunt for new, fresh uses for it - including savory - and found this recipe. I had a quart of strawberries, some raspberries and blackberries that needed to be used so I made a Rhuberry Crumble. Wow!! Easy, quick and so so delicious. I left out the ice cream - I don't like my ice cream touching my pies/cakes or crumbles. :-) Definitely a keeper to make again as the summer rolls through. Thanks so very much!!
