For the pomegranate cheesecake I used the recipe I link to in the post. The other video is just showing the mixing process, but uses a different recipe.

Great question, I am not sure, I will ask around and see if I can find out. mascarpone will be too soft to mimic cream cheese.

Question…I live in France…and the Philly ‘tub’ cream cheese is not nearly as ‘dense’ as the block format of Philly in the States…Would you know of a suitable European conversion for the cream cheese factor?! I am wondering of a mix of Philly ‘tub’ cream cheese and mascarpone might work?! I actually have heard of ex-pats substituting Kiri ‘cheese’….lol…but I must admit I am perplexed!! My family really misses NY cheesecake…as do I!! Any thoughts would be so very appreciated!
