Do you think frozen peaches dried and cut into small pieces could work. The peach season is so brief here and the quality is so variable. Thanks. I love the caramelized white chocolate and your guidance is great. I think David Lebovitz has a microwave method, but it could be risky.

They’re in the oven right now, the fragrance is unbelievable, even though I did have to omit the caramelizing step since I had a four year old would-be baker assisting me!
