					<description><![CDATA[Loved all the details in video!  I made this for fourth of July cause pie is an all American thing and I needed to cut my teeth on a peach pie.  I have made pumpkin, blueberry, and key lime pies only so I really needed to up my pie game.  I followed the recipe with one exception, I needed to leave the peaches in fridge for a couple of hours for a family thing.  The outer crust burned slightly after 30 minutes and the peaches which were initially more unripe than ripe turned a bit too soft after 45 extra minutes at 350.  I tented the pie after the 30 minute mark and with the reduced heat it did slow things down yet still came out a bit overdone I think.  I also messed up and was too quick to egg wash and sugar prior to it&#039;s final refrigeration.  I learned so much from this recipe but could use some extra help here.  Also, the printed recipe states to use butter and crisco and to use food processor first but video uses and all butter crust and no food processor.  Do you think this might have made a difference in any way.  The pie was delicious other than fruit being softer than intended, I am eager to try again!!!]]></description>

No, you are just fine to leave it at room temperature, since the egg is well baked and safe by the time the pie is baked through.
