Hi! Zoë always assembles them to eat right away. That keeps the crust on the marshmallow and avoids the matzo from getting soggy. The matzo is already covered in caramel and chocolate so it probably won’t get too soggy.

Do you find that the matzoh gets soggy by the next day? Would dipping top and bottom of the marshmallow in chocolate before sticking onto the pieces of matzoh crack prevent this? It’s what I do with other homemade marshmallows that will have any kind of moisture-absorbant crust or topping (such as graham cracker crust with a pecan pie marshmallow . Or maybe these don’t last long enough for it to matter — ha!
